BBQ Chicken Pizza with Fresh Herbs

The other night, I made acorn squash ravioli (boxed from World Market) with brown butter, shallots, Parmesan cheese and fresh sage leaves from my herb garden for dinner. It turned out delicious, but I was rushed and didn't get any photos. 

The next night, I made BBQ chicken pizza with some chopped garlic chives from my herb garden. I snapped some photos this time and decided I would share the recipe here on my blog.

BBQ Chicken Pizza

  • Flour 
  • Store bought pizza dough ball (from bakery at grocery store)
  • Barbecue sauce (I used Sweet Baby Ray's Honey BBQ)
  • Shredded mozzarella cheese
  • Shredded cheddar cheese 
  • Leftover chicken (shredded, approximately 2 chicken breasts)
  • Red onions, sliced thinly
  • Chopped garlic chives (from the garden)
  • Salt & pepper to taste

Let dough sit out for about an hour. Preheat the oven to 400 degrees. Sprinkle some flour on pizza stone and stretch and flatten dough onto it. Pour and spread some barbecue sauce evenly over dough (I like to go heavy on the sauce).

Spread shredded mozzarella cheese evenly over sauce until well covered. Shred the leftover chicken breast (or use rotisserie chicken for a quick option), season with salt and pepper, and spread over cheese evenly. Slice half a red onion and spread over cheese. Top with shredded cheddar cheese until covered evenly (I go heavy on the cheese too). Finally, sprinkle chopped garlic chives evenly over top.

Bake for 25-30 minutes.
